Brunswick Stew~ A Mrs. Fearnow's Knock off


I love to eat Mrs. Fearnow's Brunswick stew, in the yellow can, which is surprising because 
I despised lima beans when I was growing up.
I would take every lima bean that I was forced to eat,
stick them all in my mouth and drink my water until I had swallowed them all whole!  
But I love this stew and I really start to crave it when the weather turns cold.

A few weeks ago, I had a can of the stew for dinner but since then
our local grocery store has been sold out.  
I started looking at recipes online and was surprised to see recipes 
made with V8 Juice or 3 sticks of butter.  
I know that V8 juice was NOT around at the time that Brunswick Stew was invented!!
I wanted to get as close to the original recipe as possible but
with the modern conveniences of already cooked chicken, frozen vegetables, and canned tomatoes!

This is what I came up with, with the help of my Mom who's family has made
Brunswick Stew for as long as she can remember.

From George Fearnow:

"We sold the business in 1999, and I retired after 30 years of making Brunswick Stew. My Grandmother, my mother & father, and my aunt & uncle made the stew from about 1929. Comment on history. Brunswick stew origin lies with the spices used. Williamsburg was most likely the start of Brunswick Stew but Brunswick County, VA and Brunswick, Georgia will protest that.
Recipe suggestions: 1.) Use white shoe-peg corn 2.) Use a whole chicken to get the best broth. 3.) Save the lesser fatty pieces of skin to be minced and added back in. 4.) Use salt & sugar in equal amounts but maybe less if you use sea salt. 5.) Use red pepper & black pepper. 6.) Use whole tomatoes but crush and dice in a 50/50 mix. 7.) Use russet potatoes (thickness increases directly by stirring). 8.)Onions & carrots should minced. 9.) Okra can be used but it can be bitter sometimes. 9.) Oregano & poultry seasoning were never in Brunswick Stew of colonial times. 10.) Yes – The original recipe calls for squirrel or wild game."


My adaption of
Mrs. Fearnow's Brunswick Stew recipe:

2.5 lb. russet potatoes, peeled and cubed
3 small yellow onions, diced
24 oz. bag frozen shoe peg white corn kernels
24 oz. bag frozen baby lima beans
28 oz. canned crushed tomatoes
28 oz. canned diced tomatoes
1 cooked deli chicken, shred white and dark meat
1/2 stick salted butter
 can chicken stock
sea salt
sugar
black peppercorn
crushed red pepper flakes
Worcestershire sauce


Boil potatoes and onions until almost tender, drain.  
Melt butter in large (8 quart pot) and add corn, lima beans, cooked potatoes and onions.  
Stir vegetables in butter then add 1/2 can chicken stock.
Add both cans of crushed and diced tomatoes.  The seasonings get a little complicated to break down because I literally added 1/2 tsp. and 1 tsp. increments of salt, sugar, black peppercorn, and crushed red pepper flakes until it tasted right.  I added 2 splashes of Worcestershire sauce at the end because it seemed like something was missing.  
I heated on medium/high heat until boiling, then reduced heat to a simmer.  
The longer it simmers the better it tastes!

*I added the rest of the chicken stock as the stew cooked down and became thicker.  
Ours cooked all morning and afternoon.

**I know the original recipe calls for all the chicken parts but I'm not a big fan 
of raw chicken, so I like the cooked chicken and chicken stock version.

***My Mom says to add bacon grease, but I didn't have any.

Everyone who ate is said is was great, 
so I feel like I hit pretty close to what the original tastes like.

My Favorite Christmas Cookies




A few years ago I was watching some cooking shows around the holidays
and every show had a version of these cookies.  They are my favorite!!

sugar cookie dough
cranberries
pistachios
white chocolate

Add 1 cup each of cranberries and chopped pistachios to the cookie dough.  
Cook cookies to directions, I cook mine the least amount of time so they stay soft and chewy.
Once they cook and cool, heat the white chocolate until melted and put in an icing bag.
Decorate cookies with white chocolate.

Christmas 2012~ A Christmas Surprise


This was the Christmas collage that never made it into the Christmas cards.
I think this is the first year that I have not sent out at least a New Year's card!
I just couldn't bring myself to sit down and do them this year,
we had so much going on with parties and family.
I don't think I sat down and rested until the day after Christmas and by that time,
 all I could think was "What's the point?".






This was the kid's surprise Christmas present!
We named her Lulu and we are told she is Golden Retriever and Yellow Lab mix.
My husband's cousin was given her but she already has a few dogs,
so she was fostering the puppy until she found a home for her.
Three days before Christmas I casually asked her Mom how all their dogs were doing and
found out about this little one.  It just felt right and I loved being able to surprise the kids!




My daughter and her quickly became good friends. 








We brought her home on Christmas Eve.
The first few days she was very quiet and slept a lot.









But not anymore, this wild little puppy has WOKE UP!
She is crazy, funny, and fearless.



We gave her her first bath last night.  She did pretty good.
We are working on potty training, she will go potty outside 
but she still has accidents in the house.

We are also working on teaching her to bite less, those puppy teeth are vicious!
The best thing is that she is already crate trained so at night she goes in her crate 
and sleeps all night with no accidents.  It is the best!!

It's been a little over a year and a half since we lost our oldest dog, Rudee,
and we still have our beloved Black Lab mix, Zoe, who is awesome with the kids.
She is almost 10 years old and has been a little depressed without another dog around,
but this little one has thrown her world for a loop.
It's funny to see her act motherly but then put Lulu in her place when she bites too hard.
It's a lot of work, I had forgotten how much trouble such a little puppy can get into, but honestly
I love the chaos and I have quickly become totally devoted to this little puppy, Lulu.

Mr. Jingles... our Elf on the Shelf


This was our first year having an elf visit.  We named him Mr. Jingles and at first he was really good.
He just hung out on the tree.




But it didn't take long for him to start being naughty.




He toilet papered the tree, then my daughter's door.




Then he left a stern message, scared the kids enough to set them straight!




Some days he was just hanging out with the gingerbread people.
One day he was hanging from the ceiling fan.




But some days he was really naughty.
Like when he dumped a huge bag of bows all over my son's room while he slept.
Of course, the kids thought this was hilarious!




My daughter also thought it was great when he used Mommy's red lipstick to write on 
the mirror.  Guess who had to clean that up?!!




He even found time to catch a movie with Barbie!




...and get into the sprinkles and cheerios!










But I think my favorite was when Mr. Jingles mustached the kids, 
with PERMANENT marker!!!  They still had 'staches for Christmas Eve.




We were sad to see him go but we know we'll see him again next year! ;-)

New Year, Fresh Start!


  Whew, well we survived the holidays and the kid's winter break!  I can't believe how fast it flew by!!  I have lots of pictures to show you and we got a little Christmas surprise that I'm sure you will be seeing a lot of on this blog.  I hope to have some time this week when the kiddos are in school to get some posts together.  I love the holidays but now that it is the new year, I am ready to pack up this Christmas stuff and bring in some fresh, new color to get ready for spring.  I love this years greens and bright colors, I think this weeks "Inspiration Friday" post will be all about getting ready for Spring!!

Inspiration Friday No.34~ Out of Sadness Comes Love


  This has been a difficult week, I have not cried this much since 9/11, as I'm sure many of you have.  I am so happy to have had no work scheduled for this week so I could go through all the stages of shock, grief, anger, and finally sadness that has encompassed me.
  I do not watch the news often, I get most of my news from my Facebook or Twitter feed, but this week I have been glued to the news stations.  I have stayed up way too late for too many nights looking at guns statistics and becoming more angry the more I learned.  This one week feels like a month and I am no where near Newtown, Connecticut.  I can only just imagine what it must be like for them.
  With today being a week since the shooting I am going to take a moment of silence along with many others.  You may see some websites go black for one minute tomorrow starting at 9:30 a.m..  If you are on Twitter you can find out information at #momentforSandyHook.
  I have cried so many tears listening to the parents of these children.  My daughter and I even talked about doing a "peace sign" birthday cake like Grace McDonnell did for her 7th birthday.  She is the same age as my daughter, but Grace will never celebrate her 8th birthday.  This is so difficult for me to even comprehend how this must feel for her family, so many beautiful children, their teachers and principal, all lives lost too soon.

   I am sure today will be difficult for so many, but I know for myself, I need to move on.  
The news stories are becoming less about those that were lost and more about the disturbed 
young man and his motives.  No matter what they may be, it will never justify the killing of 
innocent children, so I really don't care to hear it.  

Today, I will prepare to celebrate Christmas with a heavy heart 
and I will not take for granted 
that I will have what so many families will not have this holiday season.
